Apple Wine And Plum Blossoms

I have a big batch of apple wine fermenting. It's cider, with additional sugar. This batch will be, in turn frozen, turned in to Apple Jack, and bottled. I's not that I really want an extra strong potable, but it will keep better if the alcohol content is higher.

One plum tree has started blossoming, the other has buds and green growth, but no flowers yet.
