So far today, some things I've accomplished are pruning the plum trees and the roses, and racking a new batch of hard cider.
The cider was in the primary fermenter for 11 days, and I just siphoned it into the secondary fermenter. It will continue on, bubbling away, for a month or more. Once the sugar is completely converted to alcohol, then the malic acid ferments into lactic acid. I finally bottle it into quart bottles, adding a touch of additional sugar, so that in about 21 days, I have sparkling hard apple cider.
