So I picked all the ripe peppers and all the tomatoes. There's a final gallon of tomatoes, with about 1/3 showing some color. I'll ripen them indoors.

I had an excellent pepper and squash crop this year, and a good okra and tomato crop.

Lots of vegetables are now safely put away for the winter and spring.

How do you store your peppers & tomatoes?

The tomatoes are canned in 1 qt mason jars, the peppers are dried in a food dehydrator them frozen in zip lock bags.

The squash is out in the garage on wire racks. I eat the squash that doesn't look perfect first, the perfect squash lasts until about April, and then I pressure can what's left.

I also did can a lot of tomatoes, I should try doing peppers in dehydrator. My parsley came out good in dehydrator, sweet potatoes dehydrated are great treats for dogs too.

I grow hot peppers, similar to serraƱo peppers. I put them in the dehydrator whole, and when they're hard I freeze them.

When I use them, I take maybe 10 frozen peppers, break off the stems and pop them in a dedicated coffee grinder. They are reduced to a coarse powder.
