Plum Wine

I have plum trees, and you just can't eat all the plums, so I make wine. It turns out as a slightly sweet sparkling wine, with moderate alcohol, and nice plum flavor.

Five gallons are bubbling away in the primary fermenter, and in about five days it will go in the secondary fermenter for at least a month. Before I bottle it, I prime it with a touch of sugar and make it sparkling wine.

I have enough plums still for a second batch, and after that the fruit on the second tree will ripen, and I'll make a third batch.

That's 15 gallons total, or about 75 bottles of wine.
