Rich With Ripe Tomatoes.

I cooked a great dinner, chicken and eggplant with a green bean/tomato dish on the side. It's really nice having fresh garden vegetables to cook with. It's true that when you have good ingredients, even simple dishes are fantastic.

My tomato plants are six feet tall, and I pick them by hand. A garden variety is selected for taste, rather than commercial considerations such as ripening at the same time and having thick skins that survive jostling. I saw a commercial tomato harvest the other day. A huge 10 acre plot of low growing roma tomatoes was being machine scooped into open highway trailers for transport to a processing plant.
