Onion Emergency

Some of the stored red onions have started to sprout! I have the sproutees in the food dehydrator now, and as they flash dry, they give off a nasty sulfur smell. The littlest ones will soon go back into the ground to grow into big onions.
Editor's note: Once the onions have dried a bit, they give off a wonderful odor, like french onion soup. As I was packaging this first batch, I couldn't resist eating some dried onion staright out of the dehydrator.

Some of my stored onions aren't keeping so well either. I think this is just life and I hope you can salvage usable parts of your crop.

In the old days, we would have had root cellars. I noticed the sprouting quick enough, so now I can freeze dry the ones that sprout.
